An upset is when a lower seeded fencer beats a higher seeded one.
It might make the higher seeded fencer angry, but that's not why we use the word `upset'. It's probably because you've just forced a fencer out of their usual upright, level, or proper position. The dictionary calls an upset an "unexpected defeat".
